Tonight we are starting a new feature on the 'Into the Desert' blog: what I am having for dinner tonight.
This isn't only a way to take navel gazing to the next level. It's also a way to help me remember all the recipes I find on the net, where they are and how they taste.
Tonight I'm having Chicken Curry in a Hurry, courtesy of the Simply Recipes blog. Since I don't have any sour cream on hand, I will use greek yogurt, which for some reason, I do.
I'll let you know how it comes out...
ETA: A rousing success that is cheap and pretty easy. I used chicken thighs instead of breasts, which may be why it took so much longer to cook than the recipe said, my only complaint. I would make it again, but not make the sauce until the chicken is nearly done. The Greek yogurt worked well, too.
